When direct wiring a stereo in 2003 s-10 what do you hook the illumination wire to?

There is not an illumination wire on the factory harness of a 2003 S-10. Illumination is controlled by the dimmer switch. You can tap the illumination wire at the dimmer switch or look for an illumination source like the hazard switch.
